    If you’re talking about Japanese rice cakes… freeze them. Thats really the only way to preserve them. Put flour on them (or maybe even powdered sugar for chocolate mochi) to keep them from sticking to everything…

    Your hands should be very clean or use gloves. Make sure that the area and utensils you are using are very clean. This should prolong the growth of mold. Try mixing the chocolate powder with corn starch. How are you storing the finished product? It shouldn’t be covered when hot/warm.
