I buy those lovely big gourmet type sausages, like British Bangers and Bockwurst and Bratwurst from Saag’s. I wrap them individually in heavy duty foil and put them in the freezer in a freezer bag. (The double protection prevents freezer burn.) Then keep some Tater Tots or other nice potatoes in the freezer, and hubby should be able to feed himself OK, with maybe a salad from the deli to add veggies. There are also nice frozen veggie mixes, if he can at least boil water and read package directions successfully.
Also, practically any casserole type dish can be frozen in a Serve ‘n Saver (that’s the Rubbermaid brand; like Tupperware) and reheated with the same instructions: preheat oven to 350. Remove casserole from Serve ‘n Saver and put in glass casserole dish (where it will have the shape of the freezer container, not the glass casserole), cover and heat for 20 minutes. Uncover, stir and spread into the dish (once it’s thawed), and return to oven for another 15 to 20 minutes, until it’s hot clear through.

i’m a single male and i make casseroles and freeze in portions.i’ve never found one that is at least filling and some are as good as fresh.pasta meals are good.
just look thru any cookbook.

I love to make big batches of Soups, Stews and Chili’s and freeze them in those ziploc disposable tupperware things. It works great! Almost anything can be made ahead and frozen, you can put together some things, like marinate some meat or put together a caserol and freeze it before cooking then you just pop it in the oven!
