atkins recipes?

My brother in law is on atkins. When he comes over I make something I think is atkins friendly, but isn’t (last time he went to Mcdonalds). What can I make without having to buy stupid special food?

  2. Beef and Broccoli Stir Fry

    1 tablespoon canola oil
    2 cups broccoli — blanched
    1/2 cup thinly sliced carrot
    1/2 cup onion — wedges
    6 ounces sirloin steak — boneless,strips
    1 1/2 tablespoons chicken broth — or broth
    1 tablespoon soy sauce, low sodium
    1/2 teaspoon guar gum — or cornstarch
    1/4 teaspoon splenda
    1/8 teaspoon salt — optional

    -In a 10″ skillet or wok heat the oil;add the prepared vegetables.
    -Cook, stirring quickly & frequently until vegies are crisp tender & onions are
    browned.
    -Stir in the beef strips,cook till desired doneness.
    -In a small bowl, combine the remaining ingredients, stirring to dissolve the
    cornstarch; add to the beef mixture& cook stirring constantly until sauce is
    thickened, 2 -3 minutes.
    -Carb count per serving :9.4 minus 4 grams fiber= 5.4 carbs & 19.1 gr. protein

    crab salad

    two cans crab meat
    chopped celery,about 1/4 cup
    onion,just enough to your liking
    bell pepper, enough to your liking
    mayonase, enough to moisten salad

    mix all ingredients together, salt and pepper to taste.
    lay a lettuce leaf on a plate and top with crab salad.
    you can also add about three black olives and some cheese cubes beside the salad on your plate to dress it up pretty. pickle slice can also be added on plate.
    this recipe will serve two people and is very low in carbohydrates, i don’t know the exact amount but i do know its real low.

    i have been eating this salad for months and in four months i have lost forty pounds so far.

    BACON CHEESEBURGER CASSEROLE
    1 pound ground beef
    1 egg
    4 ounces shredded cheddar cheese
    4 ounces shredded mozzarella cheese
    3 to 5 slices of bacon (cooked and crumbled)
    garlic powder to taste
    black pepper to taste
    chili powder to taste

    Preheat oven to 350 degrees.
    Lightly brown beef and drain well.
    Mix all ingredients together except Mozzarella.
    Press mixture into small casserole dish and top with Mozzarella.
    Bake in the oven for 25 to 30 minutes.
    Cheese should be melted and lightly browned.

    2400 Calories; 5g Carbohydrate

    Chicken ham bake
    4 chicken breasts
    4 long slices of thin ham
    4 slices of mozerella cheese (or swiss)
    1 cup of chicken stock (usually two tbs of stock to 1 cup of water)
    2 tsp garlic powder

    Place chicken in a baking dish, pour chicken stock over the top,then garlic powder. Cook in preheated 350 degree oven for about a hour. Take chicken out of oven and drain all the stock out of the pan and wrap ham around breast and lay cheese on top. Put back in the oven for another 5 min. Let cool for 5 minutes and enjoy.
    2 carbs per serving
