How did early Western American settlers preserve food, other than salting, dehydrating, pickling, smoking.?

I imagine it had something to do with cellars/caves, but I can’t find any information with which to verify this.

  1. Sugaring, Jellying, Stewing, Alcohol Preservation. I’m not sure that Western American settlers followed these processes. Sorry I was unable to help more.
