Do Buffets Have Good Food Quality?

I have a question regarding buffets. You see, I feel that the quality of food that you get at a buffet is nothing like that of what you would get at a restaurant. After all, how could a buffet make a profit if they served top quality food when people throw out half of their plates just because they are bored of what they are eating, and want to eat something else. Also, on top of that, buffets are generally very cheap. Then when I tell someone that the quality of the food isn’t good, they say. “What do you mean, the food tastes great. It is very good quality.” I always think that it is the way they preserve the food and the way they prepare it by doing something to it, maybe adding salt or something, that makes the food taste decent, but the quality is really awful. Am I wrong? And if so, how do they make all of this food for such a cheap price?

Why are you supposed to cut open a vacuum sealed bag before heating in microwave, can’t you just heat sealed?

I have a seal-o-meal, and want to know if heating up bag in microwave without cutting open does anything to food quality. Most air is sucked out, so it can’t blow up!! Why must it be opened, i would think juices and moisture would be preserved better heating in sealed bag.
