Addiction Salmon Bleu dry cat food?

Am doing some research on good cat food, this one looks like its got some great ingredients! Feedback welcome, thanks a lot!

How do I dry and salt fish to preserve them?

Does anybody out there ever dry and salt there fish to preserve them? If so, how do you fix them when you are ready to use them. I have heard of the Norwegians and Italians drying cod fish and the Native Americans drying Salmon. I do not have a clue how it is done but I have been getting fish that I want to use over the winter and want to try something other than just freezing and smoking them. My food dehydrator or oven is too small for the amount I want to do. Thanks.
